Baked Caramel Corn!!!


I just tried this recipe TODAY and had to post because it is so DELISH!!!  It is crunchy not sticky and tastes so good!!  Just perfect for a cold day like today.  I halved this recipe and it made one cookie sheet full.

Baked Caramel Corn

1 c. butter
2 c. brown sugar
1/2 c. corn syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp.  vanilla
5 quarts popped popcorn

Preheat oven to 250*.  Place popcorn in a very large bowl.  In medium saucepan over medium heat melt butter.  Stir in brown sugar, corn syrup, and salt.  Bring to a boil constantly stirring.  Then boil 4 minutes without stirring.  Remove from heat and add soda and vanilla.  Pour over popcorn, stirring to coat.  Place on 2 large cookie sheets and bake for 1 hour stirring every 15 minutes.  (If you want it to be more chewy bake it for less time)  Let cool completely before breaking into pieces.  YUM!!

Next time I make it I'm going to drizzle some white and milk chocolate over the top after it's done baking.  

Halloween Milk Jug Lanterns

This post is a little late...but you can file the idea away for next year, right?  For the month of October just save up your milk jugs.  Draw spooky faces on the front with a magic marker and cut a hole in the back.  Take a strand of white lights and put a few bulbs in each milk jug.  Voila!  Some cute lanterns to line your walkway or just to decorate your house.
